ow to Cook Heirloom Dry Beans

  • Soak for 6-10 hours.

  • Rinse.

  • Fill a pot with soaked beans and fresh water.

  • Bring to boil- keep at a boil for a few minutes.

  • Simmer for another 20-40 minutes; until beans can be smashed between your fingers.

  • Add to a recipe or simply enjoy with salt and olive oil.

Other Tips

  • 1 pound of dry beans = about 2 cups.

  • 1 pound of dry beans cooked = 5 to 6 cups. That’s the equivalent of 3 to 4 cans of beans (15.5 oz.).

  • Save yourself some time and cook a bunch of beans at once. When the beans are cool, freeze in serving-size containers.

  • If draining the broth, freeze it and use to flavor soups or cook grains later.
